Happy birthday, Dad! And leftover soup.

Happy birthday to my dad! This afternoon, I went to my parents’ house to celebrate with my family. Dad wanted to use his new fish cooker, so he fried fish and french fries and hush puppies.

Mom made Mad Hatter Salad, which is delicious, but not at all healthy. It has butter in it, for goodness’ sake. I call it butter salad. ;)

I was soooooo full from this lunch. Definitely wasn’t hungry until dinner.

As I mentioned earlier, I put dinner in the crock pot this morning. Every week or two, I try to do a soup in the crock pot made of leftover veggies. I just toss whatever veggies I have leftover during the week into an airtight container in the freezer. When it’s soup time, I just combine those frozen veggies with whatever else I have laying around and make a soup. Easy, cheap, yummy.

Today, I had three potatoes that really needed to be used. In the freezer, I had a mix of onion, green bell pepper, and tomato.

So I chopped up the potatoes…

And put them in the crock pot with the frozen veggies + garlic + bay leaf + thyme + black pepper + chicken broth.

Mmmmm. Crockpot.

After spending 8 or so hours on the “low” setting, it made a delicious dinner!

And I have leftover leftover soup to eat for lunches this week. :)

After dinner, it was movie time. There was also Fuze and popcorn.

Ooh, crinkle fries. That’s the second-best kind, after waffle!

Also, I hate to complain, but here’s some feedback: it messes me up that the “leave a comment” is at the top of the post. I hope it’s less because I’m too lazy to want to scroll back up after I read and more because post-then-comments is the natural flow.

And finally, your leftover-soup intrigues me. I’ll have to try that sometime.

You should definitely try it. It’s like a free (and reasonably healthy) meal once every couple of weeks!
